These French, filet-type beans are thinner and smaller than other green beans, but have a delicious flavor and crispy texture. Beans are ready to harvest about 2 weeks after they bloom. Pick frequently to prevent beans from getting too starchy and eat them as quickly as possible or freeze, if necessary.
